English Leg of Lamb

A good lamb leg makes a fabulous roast. There are two classic approaches – either roast it fast and serve it pink, or bake it slow and serve it falling off the bone. Both will be excellent.
Tip – try stuffing anchovies into the meat, but don't worry about the meat turning out 'fishy', it won't! The anchovies simply melt into the meat as it roasts, combining beautifully with garlic and rosemary and lending a delicious salty tang to the juices!
